Curry is a classic winter warmer dish, which is perfect to make on a cold day! This vegan-friendly curry combines roasted sweet potatoes, peas and spices.
Here are some step-by-step instructions on how to make this dish:
What you will need:
(serves 4)
• olive oil
• 1 sweet potato, chopped
• 1 onion, diced
• 2 cloves of garlic, finely chopped
• 1 chili powder
• 1 tsp paprika
• 1 tsp curry powder
• 2 tsp turmeric
• tin of chopped tomatoes
• 1 pack of tomato passata
• cup of frozen peas
• bag of spinach
• salt and pepper
Method:
- Preheat your oven to 180 degrees on fan setting.
- Chop up the sweet potato into bite-sized chunks, drizzle in oil and salt and pepper. Roast in the oven until soft, about 20-25 minutes.
- Heat the olive oil in a large pan, and add the onion, garlic and chili powder. Allow the vegetables to cook and stir frequently until softened, about 5 minutes.
- When soft, add the roasted sweet potato and stir, about a minute.
- Now for the spices: add the paprika, curry powder and turmeric and stir together until fragrant, about 2 minutes.
- Add your chopped tomatoes, passata and peas and leave to simmer, about 5 minutes.
- Add your spinach and leave to wilt, about 2 minutes.
Serve with rice or naan bread, or both!
