If you’re looking for an easy authentic recipe then look no further than this vegetarian pad Thai - which is just as delicious as a traditional meat based pad Thai!
What you will need:
- 400g dry rice noodles
- 1 courgette
- 2 red peppers
- 2 carrots
- 1 red chilli
- 3 tbsp fish sauce (or vegan sub)
- 3 tbsp brown sugar
- 3 tbsp soy sauce
- 3 tbsp veg stock
- 2 tbsp white wine vinegar
- Coriander
- 1 whisked egg
- 1 lime
- Crushed peanuts
Method:

Put the rice noodles in a bowl of hot water to cook, and leave them until soft

Make the pad Thai sauce by mixing the fish sauce, brown sugar, soy sauce, vegetable stock and white wine vinegar

Slice up or spiralize the veggies and then fry for a few minutes until tender and put to one side

Add the noodles and the sauce to the pan and stir for a few minutes

Add your whisked egg to the mix and toss the mixture around

Once cooked, add your veg and a handful of chopped coriander and mix everything together

Serve with crushed nuts over the top with some lime wedges and enjoy!
