When faced with a soup recipe, many people jump to conclusions on how it may be time-consuming, expensive, and bland. This cheap and easy pea and mint soup recipe will change that perception forever.
What you will need
- 3 garlic cloves
- 1 bunch of spring onions
- A handful of fresh mint
- 3 cups of frozen garden peas (or petit pois)
- 3 cups of vegetable broth (made from a vegetable stock cube)
- Splash of olive oil
- Salt and pepper for seasoning
- Natural yoghurt (optional)

Method:

Firstly, chop the garlic, spring onions, and fresh mint, and add to a heated pot with a splash of olive oil. Allow to sweat for 7-10 minutes

Then, add the frozen peas and the vegetable broth. Bring to boil, then allow to simmer for 20-30 minutes

Once the peas have cooked and softened, remove the pot off the heat. Use an electric hand blender to smooth out the soup. Season to taste.

Serve with a dollop of natural yoghurt (optional)
