Simple chicken and chorizo pasta recipe

This hearty and super easy dish will warm your soul as the December temperatures begin to drop. Try this recipe when short for time, or simply craving some wholesome grub.

What you will need:

  • 1 cup pasta (I used spaghetti)
  • 1 tin chopped tomatoes
  • 1 leek
  • 1/2 ring of chorizo
  • 2 chicken breasts
  • 1 tablespoon tomato puree
  • Handful of grated cheddar cheese


  1. Slice the chorizo into thin semi-circular discs and begin to heat in a dry pan until the oils begin to run out of the chorizo
  2. Slice the chicken breasts into cubes and add to chorizo
  3. Chop the leek into thin discs and add to the chicken and chorizo. Allow to soften for 7 minutes, constantly stirring
  4. Add the passata and stir in the tomato puree
  5. In a seperate pan, boil some water and add to the pasta. Cook the pasta following the instructions on the packet
  6. Plate up by combining the pasta and the sauce
  7. Serve with grated cheese on top
