Rustic meatball tray bake

Today, I will share with you a recipe that is not only a cheap and hearty dish, but also straightforward and effortless meal.

What you will need:

  • 500g lean beef mince (I used 5%)
  • 1 egg
  • 1 leek
  • 1 butternut squash
  • 1 brocolli head
  • garlic powder
  • olive oil (roughly 4 tablespoons)
  • salt and pepper for taste

Method:

  1. Preheat your oven to 180 degrees celcius
  2. Peel and chop your butternut squash into cubes (or you can by the pre-chopped cubes for a little but more money) and place into a large oven tray. Season squash using olive oil, garlic powder, salt and pepper and place into oven for 10 mins
  3. While the squash is baking, empty the mince beef into a large bowl and crack an egg over it. Season with salt and pepper and start combining into one solid piece
  4. Begin to pull tablespoon-sized parts from the mixture and roll in your hands to form spheres and place on a plate. Do this for all the mixture to form your meatballs
  5. On a chopping board, wash and chop your leek into thick disks, and cut the florets off the brocolli
  6. After the squash has been in the tray for 10 minutes, add the meatballs, leeks, and brocolli in the tray, season to taste and bake for another 20-25 minutes (until meatballs are no longer pink in the middle)
  7. When time is up, remove tray from oven and serve
