Chocolate orange Mini Egg cake

Get involved in the Easter festivities with a tangy, yet chocolatey treat. Try this simple recipe to 'wow' your flatmates.

What you will need:

For the cake:

  • 175g butter
  • 175g caster sugar
  • 175g self raising flour
  • 3 eggs
  • 2 tablespoons of cocoa powder
  • 2 tablespoons of milk
  • 1 teaspoon of baking power
  • The zest of one orange

For the icing:

  • 50g good-quality dark chocolate (minimum 70% cocoa solids)
  • 100g unsalted butter, softened
  • 200g icing sugar
  • 1 tsp vanilla extract
  • milk, to loosen
  • 1 pack of mini eggs to decorate

Method:

  1. Pre-heat the oven to 175 degrees and grease two cake tins

  2. Put all the ingredients into large bowl and whisk

  3. Bake the cake for 13 mins

  4. Remove cake from oven and leave to cool for 10 mins and remove from tin

  5. Allow cake to completely cool

  6. ICING: Melt the chocolate over a pan of simmering water, allow to cool so it is not hot to touch

  7. Beat the butter and sugar until soft

  8. Fold in the melted chocolate until throughly mixed

  9. Apply the icing to the cake

  10. Decorate with mini eggs
