When faced with a soup recipe, many people jump to conclusions on how it may be time-consuming, expensive, and bland. This cheap and easy pea and mint soup recipe will change that perception forever.

What you will need

  • 3 garlic cloves
  • 1 bunch of spring onions
  • A handful of fresh mint
  • 3 cups of frozen garden peas (or petit pois)
  • 3 cups of vegetable broth (made from a vegetable stock cube)
  • Splash of olive oil
  • Salt and pepper for seasoning
  • Natural yoghurt (optional)

Method:

  1. Firstly, chop the garlic, spring onions, and fresh mint, and add to a heated pot with a splash of olive oil. Allow to sweat for 7-10 minutes

  2. Then, add the frozen peas and the vegetable broth. Bring to boil, then allow to simmer for 20-30 minutes

  3. Once the peas have cooked and softened, remove the pot off the heat. Use an electric hand blender to smooth out the soup. Season to taste.

  4. Serve with a dollop of natural yoghurt (optional)
